Directions

Lay chicken in the bottom of the crockpot. Slice the bell peppers and onion , mince the garlic. Layer these items over the chicken.

Then top with the dry ingredients. Pour the tomatoes over the top; do not mix.

16. ROASTED CHICKEN

Ingredients

1 Whole Roasting Chicken

1 cup water

1/2 tsp kosher salt

1/4 tsp ground black pepper

1 whole lemon, sliced thinly

4 Tbl butter or ghee

2 Tbl chopped fresh parsley

Directions

Rinse and pat dry your chicken. Rub all over with pepper and salt. Place the chicken in your crockpot and pour the water into the pot with it. The liquid should cover the bottom. Cook for about 3 hours on High.

Before serving either add the butter, lemon juice, and parsley to the pot for ten minutes.
